I‘m always looking for great new ways to increase my veggie intake and take the ubiquitous cauliflower to the next level of zing. This recipe takes the letdown of “Cauliflower again???” to the acclaimed shouts of “Cauliflower AGAIN!!!” Enter the wonderful and easy to fix Roasted Buffalo Cauliflower.
This recipe is quick and easy with only three ingredients and a few sprinkles of your preferred seasonings that you have on hand in your spice cabinet. Get ready to have your low carb socks knocked off!
1 head cauliflower, cut into florets, stalks removed
1 stick (1/2 cup) melted butter (no margarine here)
1/4 cup Sweet Baby Ray’s Wing Sauce
Seasonings of your choice, I use Lawry’s, Sazon, and Goya.
Place butter, wing sauce and seasoning in a large bowl. Whisk together. Toss cauliflower in your seasoning sauce and bake on lined baking sheet (greased aluminum foil or parchment paper) in a single layer at 425 degrees for 20-25 minutes or until nice and brown and to your desired doneness.
