Who doesn’t love Chocolate, particularly when it’s the Best Low Carb Chocolate Molten Lava Cake?
This post is combines three things that I love… food, low carb living, and creativity.

I’ve always wanted to compile all of my low carb recipes into one binder and then the idea hit me… I can smashbook/scrapbook/journal them into one place for future reference and can enjoy the creative process and wonderful recipes all rolled into one.
How awesome is that?
Since this Chocolate Molten Lava Cake is one that I make fairly regularly, what better place to start?
This recipe is gluten free, grain free and contains no sugar.
And you’d never know there was no flour in it.
The best thing is that takes about 3 minutes TOTAL to make so it’s instant gratification!
Chocolate Molten Lava Cake
1 Tbsp Unsweetened Cocoa
2 Tbsp Melted Butter
2 Tbsp Heavy Whipped Cream
1-2 pkgs of your favorite sweetener. Stevia is good!
1 Tbsp Cream Cheese or No sugar added Peanut Butter
Spray Mug with Pam or grease mug with butter. Lightly melt the butter, taking care that it doesn’t clarify. Mix together egg, cocoa, butter, sweetener and heavy whipping cream with an immersion blender. Add a dollop of Peanut Butter or Cream Cheese to the Center.
This recipe might take a bit of tweaking to perfect. The key is not overcooking it. Your lava cake will be done when you press on the top middle and it is solid and not battery. Depending on the power of your microwave, the size of egg you use, and the height and width of the mug, it will effect how quickly it cooks, s0 be patient. In the beginning (and when I use different mugs) I had to cook it for a minute and then add an additional 10 seconds cooking time, repeating as necesary till done.
Microwave 1- 2 minutes till done in center.
Don’t forget to write down your size of egg used and how long you cooked it for next time!
I picked up the Binder at Michael’s and the paper/inserts at Hobby Lobby on clearance for super duper cheap. I love the colors… the paper… the theme…everything. It’s just lovely!
For assembling the pages, I used washi tape, mason jar punches adorned with washi tape, life cards and stickers. It was very easy to put together. I glued everything down with a tape roller since it makes life easy!
